Las Vegas can be a magical place. The Egyptian Pyramids, the New York Skyline, the canals of Venice, and the Eiffel Tower all exist within a few short miles of each other. You can see famous singers, performers, and dine in some of the finest restaurants in the country. And thanks to award-winning pastry chef Jean-Philippe Maury, you can even see the largest chocolate fountain in the world.
While growing up in Perpignan in the south of France, chef Maury started his pastry training at the age of 17 at L’Ecole Hôtelière du Moulin à Vent and later went on to complete his master’s studies at La Chambre de Métiers in Perpignan. Today, he directs two patisseries along the Las Vegas Strip. One is in the ARIA, the other in the Bellagio.
In both locations, refrigerated display cases from ORION by Clabo play a prominent role. Although these are not new installations, they are some of our most iconic. Culinary Design and Fixture, or CDF, designed the projects and carefully selected refrigerated display cases from ORION by Clabo.
Chef Maury’s team of 70 employees produces close to 15,000 pastries each day. In 2005, he opened the Jean-Philippe Patisserie at the Bellagio, which boasts the world’s largest chocolate fountain and a Clabo USA pastry and gelato lineup that blends in perfectly well with the rest of the decor.
